Founded in 1965, Brewster Cheese is the largest manufacturer of natural Swiss cheese in the United States and specializes in natural Swiss, Swiss Select, Aged Swiss, Baby Swiss and Lacy Swiss cheeses. The whey processing division of Brewster Cheese turns a cheese making by-product known as whey into whey protein and lactose powders in Ohio and condensed whey solids in Illinois.
