Manchester Farms is the largest producer of farm raised quail in the United States. In 1974, our first year in production, we processed over 23,000 quail. Currently we process over 100,000 birds per week. In an effort to broaden our market, we had to change the consumers perception that quail was exclusively a white table cloth restaurant item and difficult to prepare. In 1991, we began vacuum tumbling and marinating our quail. Not only has this process revolutionized the quail industry, it has made quail a virtually fool-proof game bird to prepare even for the average consumer. Over the past four years, we have experienced tremendous growth and have doubled our production producing close to ten million this year. Manchester Farms employs over one hundred and twenty-five people and is truly a family owned business. Bill Odom is the president. Janet Odom is the vice president. Their son, Steven and daughter Brittney both work for Manchester Farms as well.
