While the earliest records of cheesemaking date back more than 4,000 years, it wasn't until centuries later that the age-old craft made its way to the town of Hilmar, a small but thriving farming community nestled in the heart of California's fertile Central Valley. Thanks to the forward thinking of 12 Jersey dairymen, Hilmar Cheese Company was founded in 1984. The dairymen were particularly enthusiastic about the prospect of making cheese from their all-Jersey herds, which were known for producing high-protein milk - ideal for making cheese. What began as a small cheese plant on the corner has grown to be the largest cheese and whey products manufacturing facility in the world. Guided by what the business still refers to as its core values, Hilmar Cheese Company is recognized internationally for its superior product quality, taste and functionality.
