Made-to-order hamburgers are in and franchising is out at In-N-Out Burgers. The company owns and operates nearly 200 popular burger joints located primarily in California. (A small number of units operate in Arizona and Nevada.) The chain's menu features just four basic items -- hamburgers, cheeseburgers, the Double-Double (two patties and two slices of cheese), and French fries -- but patrons are free to customize their hamburgers. The chain does not use microwaves, heat lamps, or freezers, and nothing on the menu costs more than $2.50. Harry and CEO Esther Snyder started the family-owned company in 1948.
